Time for some new skins on the stock '05 GMC Canyon SLE 4WD.
Around town I've believe I've seen some Colorado/Canyons with stock suspension running
a little larger tire than stock. Anybody run something bigger 31x10.5x15? I don't want to rub stuff when turning or hitting big bumps.

With no lift, just stick with 31's. Otherwise you can gain an inch by changing the wheel size to 16" wheels.
I don't really feel like going into much more detail.
Cranking t bars will fit you 33's, but it will be a ruff as hell ride until you do a bj flip. Some members end up needing to trim body mounts to fit larger than 31's, depends on the vehicle. There is an entire thread dedicated to this.

No. A 31 inch tire on a 15 inch wheel is 31 inches. A 31 inch tire on a 16 inch wheel is also 31 inches.
