Most guys here would say that it's a bit high, but that might be the normal for your truck. Get yourself a $20 scan tool off of eBay that can read temperatures so you know just how hot the coolant really is. Best advice from me is drive it and see if it remains constant or not. You can always change to the one thermostat that has a lower opening temperature than OEM, Motorad #538187 opens at 187 degrees.

I need somebody with more experience to fill in the details. There were a couple different configurations for the thermostat over the years, and it possible that your truck has a replacement that allows the engine to run slightly warmer and it perfectly normal. (was it like 187 vs 195*) In order for the needle to be centered the thermostat and the computer need to be expecting the same result and calibrated together.
OldTime has the best advice on this one.

Welcome to the Nation.

There were some changes to the thermostats to increase the opening temperature, but that was implemented prior to 2008. As suggested, if you are concerned, find a scan tool that can read the actual temperature. GM doesn't specify a nominal temperature. Depending on start-up air temperature, a minimum temp of 158° or 176° will set a code for too cool and a maximum temp of 225° will set an overheat condition.

My temp was getting high recently. I figured it was cause its summer. Then about 2 weeks ago on the highway my temp shot up and I almost overheated. Come to find out I had no coolant in the reservoir, and who knows how little in the radiator. Filled it up, went straight to my mechanic who works late. He hooked up some sorta air pressure squeeze thing right on where the radiator cap screws on, and slowly pumped a little air pressure. Sure as shit, it started spewing like hell outta the thermostat. Bad or misplaced thermostat gasket caused it to leak slowly over months, and then eventually over just a week or so when it got bad enough. Thermostat itself is fine.
