The speedometer in my 2011 quits. I come to the next light and it starts working when I continue. It can go for days and work just fine then the next time you come to a stop and then continue on it won't work. Just sits at 0 or maybe show 5 to 10 mph or just bounces. This the first time I've tried looking into the problem and I would think that it's come up before so someone point me in the right direction Please!

I would recommend you to take a closer look at your speedometer cable, if it is bent or damaged in some other way, get a quality replacement to see if that will resolve the issues.

We have several cables for Colorados on our web-site, follow the link to check them out: https://www.carid.com/speedometer-cables/

Have any vehicles produced since maybe 2000 or so used cables (mechanical speedometers)?

These trucks do not use a speedometer cable.
The speedometer and all the cluster instruments are electronic, driven by the OBD-II data from the PCM (and the BCM).

The instrument cluster includes a micro-controller that receives network data from the PCM/BCM. That micro-controller then drives the instruments and indicator lights (Check Engine, etc).
This is typical for almost every vehicle made in the past 10-12 years.

There is a speed sensor in the transmission tail.
The problem isn't necessarily at the sensor though, and it isn't the first place I would look.

Pull the cluster and check the connector, dirty
or burnt plug.
